Turkey & Apple Sausage Patties
Spray a baking sheet with nonstick cooking spray or line it with parchment paper.
In a nonstick skillet, heat oil over medium heat. Add onions and sauté until softened, about 3 minutes. Add apples and saute for 3 to 5 minutes longer, or until the apples are very tender.
Transfer onions and apples to a large bowl and allow
to cool completely. Add turkey,
breadcrumbs, egg whites, sage, salt, pepper, nutmeg
and allspice; mix well. Divide the sausage mixture into 16* portions
and form into 3/4-inch-thick patties.**
Place the patties on the prepared baking sheet and bake until the outside is golden brown and the interior is no longer pink, about 10 minutes for fresh patties or 20 minutes for frozen patties.
Makes 16 patties.
*A little hint about dividing into equal portions. If a recipe calls for 16 portions, as this one does, press the raw mixture into a flat square or rectangle and, using a knife, cut into a grid pattern, 4 across and 4 down.
**The patties can be prepared ahead and stored, well
wrapped, in the freezer for up to 3 months.
